Watermelon gazpacho

  • watermelon: 6 cups
  • mango: 2 cups
  • fresh ginger: 1 tbsp
  • lemon juice: 4 tbsp
  • fresh mint: 3 tbsp
  • honey: 1 tbsp
  • ground cardamon (optional): 1/4 tsp

Place 4 cups watermelon, 1 cup mango and ginger in a food processor and blend until smooth. Pour into a big bowl. Cut the remaining 2 cups watermelon and 1 cup mango into cubes and add to the puree. Add lemon juice, chopped mint, honey and ground cardamon and stir well. Chill before serving. Great in the summertime!top

Blueberry pie

Crust:

  • raw cashews: 2 cups
  • lemon juice: 2 tbsp
  • raw honey or agave nectar: 1/4 cup
  • lemon zest (optional): 1 tbsp

Place the cashewes in a food processor and grind fine to almost a powder consistency. Combine with the remaining ingeredients. Spread evenly on the bottom of a 15×25 cm baking frame or similar dish.

Filling:

  • fresh blueberries: 2 cups
  • banana: 1 pc
  • raw honey or agave nectar: 2 cups

Blend till smooth. Pour over crust and top with additional 1 cup of fresh berries. The filling is very liquid at first so set it aside or put in a fridge and it will harden up nicely thanks to the pectin found in the blueberries. top

Crust:

  • almonds: 2 cups
  • dates: 1 cup, pitted and soaked for 20 mins

In a food processor grind almonds untill fine. Add dates, blend untill smooth. Press into a 15×25 cm baking frame. (If you want the crust to be a bit more “crispy” don’t grind the almonds too fine.)

Filling:

  • strawberries: 3.5 cups
  • bananas: 3 pcs, ripe

In food processor blend 1.5 cups of strawberries and bananas until smooth. Dice the remaining half cup of strawberries and stir them into the mouse. Pour onto the crust and enjoy. top

  • bananas: 2 pcs
  • mango: 1.5 cups
  • pineapple: 1.5 cups
  • water or soy milk: 1/2 cup
  • baby spinach: 3 cups
  • fresh ginger (optional): 1 tsp

Blend all ingredients in a blender untill smooth. For a healthier version add some ground flax seeds.top

Chili

(This receipe makes 10 servings. This chili will last up to 10 days in the fridge.)

  • barley: 4 cups, soaked overnight
  • mung beans: 1 cup, soaked overnight or sprouted
  • green bell pepper: 1 pc
  • red onion: 1/4 cup, diced
  • sweet corn: 1 cup
  • tomatoes: 10 pcs, diced
  • oranges: 2 pcs, juiced
  • garlic: 6 cloves, crushed
  • raw honey: 1/4 cup
  • water: 1 cup
  • olive oil: 0.5 cup
  • soy sauce: 4 tbsp
  • herbes de Provence seasoning: 1 tbsp
  • curry: 0.5 tbsp
  • mild chili powder: 0.5 cup
  • cayenne pepper: 0.5 tbsp

Mix the ingredients above in a large bowl.

Paste:

  • onion: 1 cup
  • dates: 1 cup, pitted and soaked for 20 mins
  • sundried tomatoes: 1 cup, soaked for 20 mins

Blend in a food processor into a thick paste. Add this paste to the bowl with other ingrediens. Stir well and serve on top of zucchini spaghetti.top

Spicy Mexican rice

  • barley: 6 cups, soaked overnight
  • lemon juice: 4 tbsp
  • sun-dried tomatoes: 1.5 cup, soaked for 20 mins
  • olive oil: 4 tbsp
  • onion: 1 pc
  • cumin powder: 1 tsp
  • mild chili powder: 2 tsp
  • salt: 1 tsp
  • fresh green Thai pepper: 1/4 tsp (or more if you like)

Blend in a food processor into a paste and place in a big bowl.

  • barley: 6 cups, soaked overnight
  • cilantro: 0.5 cup, chopped
  • scallions (optional): 0.5 cup, chopped

Add to the paste and stir.top

Blackberry pineapple ice cream

  • bananas: 2, frozen (cut them in slices before freezing so they are a bit easier on the food processor)
  • blackberries: 1 cup
  • pineapple: 1 cup

Place all ingredients in a food processor and blend until fine and creamy. Serve in bowls, topped with sesame seeds.

Frozen bananas are an amazing base for any kind of ice cream. You can flavour them according to your taste with any kind of fruit combination or coco powder, sprinkle them with seeds or nuts. Be creative!top

Fudgy date torte

  • walnuts: 2 cups
  • raisins: 2 cups
  • lemon zest: 1 tbsp

Combine in a food processor and blend untill fudgy smooth. Take your time so the texture is not grainy. After done form into a round torte (2-3 cm high) on a plate.

Icing:

  • dates: pitted and soaked
  • lemon juice: 2 tbsp

Blend icing in food processor untill creamy. Spread on the torte. Top with walnuts and coconut. top

Spaghetti with tomatoe sauce

Sauce:

  • sun-dried tomatoes: 1½ cups, soaked in warm water for 20 mins
  • fresh tomatoes: 3 cups
  • fresh basil: ½ cup
  • sunflower seeds: ½ cup
  • onion: ½ cup
  • honey: 2 tbsp.
  • olive oil: ¼ cup
  • garlic: 3 cloves

Blend all ingredients in a food processor until smooth and add:

  • onion: ½ cup, chopped
  • green bell pepper: 1 pc, chopped
  • red/orange bell pepper: 1 pc, chopped
  • sweet corn: 1 ear, shaved
  • fresh basil: 3 tbsp, chopped
  • fresh cilantro: 3 tbsp, chopped
  • salt / soy sauce, curry & chili powder: to taste

Pasta:

  • zucchini / yellow squash: 2 pcs, sliced with a spiral veggie slicer

For softer noodles add 1 tbsp olive oil to your sliced zucchini / squash and dehydrate at 35C / 95F for 1 hour.
Serve with sauce. Bon appetit.
